This classic Mexican dish is served in the authentic style of the traditional large mid-morning fare on rural Mexican farms. We first slowly sweat the onions, red and green peppers and then add garlic. We then add chorizo, green chilies and tomatoes, then saute’ until all the flavors come together. Right before the sauce is complete we add potatoes and beans. Once the sauce is complete we build to order each plate. We spoon a little sauce on the plate, top with a warm tortilla, then fried egg. We top the egg with more sauce, cheese and cilantro. Served with sour cream and house-made tortilla chips.
